Shepherd’s Pie

Shepherd’s pie is one of Britain’s most beloved comfort dishes. Made with minced lamb, seasonal root vegetables and topped with creamy mashed potato, it is a meal that makes the most of good quality, locally sourced ingredients.

It is an ideal dish for batch cooking, feeding families and making the most of seasonal British produce. A well made shepherd’s pie can stretch across two meals, freezes well and improves in flavour the following day.

At BFFD, we believe the best shepherd’s pie starts with good lamb from a local farm, potatoes from a nearby grower and carrots and onions bought from a farm shop or farmers market.

Ingredients

Ingredients for the filling:

— 500g minced lamb
— 2 medium carrots, diced
— 1 large onion, finely chopped
— 2 cloves garlic, crushed
— 2 tbsp tomato paste
— 200ml lamb or vegetable stock
— 1 tbsp Worcestershire sauce
— Fresh thyme and rosemary
— Salt and pepper

Ingredients for the topping:

— 800g potatoes, peeled and chopped
— 50g butter
— 3 tbsp whole milk
— Salt and pepper

Method

1. Preheat oven to 190°C
2. Fry onion and carrot until softened, add garlic and cook for 1 minute
3. Add lamb mince and brown thoroughly
4. Stir in tomato paste, stock and Worcestershire sauce, simmer for 15 minutes
5. Transfer filling to a baking dish
6. Boil potatoes until tender, mash with butter and milk
7. Spread mash over filling and rough up the surface with a fork
8. Bake for 25-30 minutes until golden on top

TIPS

How to get the best results?

Use lamb mince with a good fat content for the richest flavour. Brown the mince in batches rather than all at once to avoid steaming.

Shepherd’s pie can be assembled a day in advance and kept covered in the fridge. Add an extra ten minutes to the cooking time if baking from cold.

Portion into individual containers before freezing. Defrost overnight in the fridge and reheat thoroughly before serving.
